Rotini with Wild Planet Albacore Wild Tuna, Lemon and Olives
    • 164oz can Wild Planet Albacore Wild Tunaundrained
    • 3lbs Rotini, rigatoni or other dried pasta
    • 1 1/2Cups Extra virgin olive oil
    • 6 1/4Cups thinly sliced red onion
    • 1/4Cup Lemon Juice
    • 1peel Lemon zest
    • 1 1/2Cups Minced garlic
    • 1/4Cup CapersRinsed and drained
    • 3/4Cup Fresh ParsleyChopped
    • 11 9.5oz jar Kalamata olivespitted and quartered
    1. Place Wild Planet Albacore Wild Tuna and juices from the can into a large bowl.
    2. Flake with a fork to separate tuna into bite size pieces.
    3. Cook the pasta in a large pot of generously salted water following package directions, drain.
    4. Meanwhile, heat the olive oil in a medium sauté pan over medium heat.
    5. Add the onions and cook, stirring frequently, until tender and lightly browned.
    6. Stir in the lemon zest and juice, garlic, capers, olives and tuna with juices.
    7. Heat through and season with salt and pepper to taste.
    8. Toss the tuna sauce with the hot cooked rotini and sprinkle with parsley.
