Mediterranean Tuna Salad
    • 164oz can Wild Planet Albacore Wild Tunaundrained
    • 4Cups Marinated artichoke heartsdrained and coarsely chopped
    • 12.5Cups Chick peasrinsed and drained
    • 3Cups Red bell pepperchopped
    • 1.5Cups Pitted Kalamata or other olivescoarsely chopped
    • 3Cups Red onionchopped
    • 1.5Cups Fresh Parsleychopped
    • 3Cups Carrotsshredded
    • 0.75Cups Fresh Basil or oreganoor 6 tsp dried
    • 1Cup Capersdrained
    • 1Cup Lemon Juice
    • 0.75Cup Red Wine Vinegar
    • Salt and Pepperto taste
    1. Place Wild Planet Albacore Wild Tuna and juices from the can into a large bowl.
    2. Flake with a fork to separate tuna into bite size pieces.
    3. Add artichoke hearts, chick peas, red bell pepper, olives, red onion, parsley, carrots, basil or oregano, capers and lemon juice to tuna in bowl. Mix gently to combine all ingredients.
    4. In a small bowl, whisk together olive oil and vinegar; season with sea salt and pepper.
    5. Pour over tuna salad and stir to combine.
